8 eggs
1 bag potato chips (consomme flavor)
1/2 onion, roughly chopped
1/2 zucchini, roughly chopped
1/2 red bell pepper, roughly chopped
1 tsp anchovy paste
1 tsp grated garlic
3 tbsp parmesan cheese
black pepper
20g butter


In a large bowl, combine crushed potato chips, eggs, anchovy paste, garlic, parmesan cheese and pepper. Mix to combine.
Melt butter over medium heat in a frying pan. Saute onions, zucchini and red bell pepper until just tender.
Pour in egg mixture and mix to combine well.
Cook covered over low heat for 10-15 minutes.
Carefully flip it over and cook the other side for 5-6 minutes or until eggs are done.
Serve with ketchup and black olives if desired.
