NIHAARI MASALA POWDER FOR ONE KG NIHAARI
1-INGREDIETNS
Ingredients

1inch piece of cinnamon stick
4 black cardamom
1/3 piece of nutmeg
2 pieces of mace
1/3 tsp cloves or 45 cloves
7-8 bay leaves
3/4 tsp black peppercorns
1 tsp cumin seeds
1 tsp dry pomegranate seeds
1.25 tsp fennel seeds
1 tsp ginger powder
1 tsp red chilli powder
2 tsp coriander powder
1/2 tsp paprika powder
2-INGREDIENTS
For 2 kg meat:
red chilli pwd 2 tbsp
kashmiri mirch pwd 1 tbsp
salt 2 tsp
turmeric 1 tsp
sonth (dry ginger pwd ) 1 tbsp

IN WHOLE SPICES WE NEED:
black pepper whole 1 tsp
cloves 8
black cardamom 3
cinnamon sticks 2 inch
cumin seeds 1 tsp
black cumin 1 tsp
coriander seeds 1 tbsp full
fennel seeds 1 tbsp full
star anise 1
mace 1 flower
nutmeg less then half
pipli 1
INGREDIENTS-3

  • 4Tbsp Coriander Seeds
    2 Tbsp Anice
    1Tsp Black Pepper
    10 - 12 Green Cardamom
    20 Cloves
    2 Black Cardamom
    1 Piece Turmeric
    10-12 Bay leaves
    3 Peace Cinnamon Stick
    3-4 Star Anice
    1Tbsp Cumin
    1/2 Peace Of Nutmeg
    8-10 Piece Mace
    3 Piece Long Pepper
    15 Gm Dry Ginger
    20Gm Red Chilli
    1.5 Tbsp Kachri/ Papaya Powder
    1Tbsp Peprica Powder
    1 Tsp Salt

INGREDIENT-4
(For 2 kg meat( mutton or chicken)

ingredients:
Whole spices:
1 tbsp coriander seeds.
1 tsp black cumin seeds
1 tsp white cumin seeds
3/4 tbsp fennel seeds
1 tbsp black pepper corns
3 small long pepper
6-7 cloves
2 small cinnamon stick
1/4 nutmeg
1 mace
1 star anise 4 green cardamom
1 black cardamom

powdered spices:
1 tbsp kashmiri lal mirch
1 tbsp ginger powder
1 tsp turmeric powder
1 tbsp red chili powder
1 tbsp salt
Method:

Transfer all whole hot spices into a small mixing jar.
Blend them well.
Now add all powdered spices into the same jar.
blend them well.
Transfer them into an airtight container.
You can use this nihari masala upto 3 months.

3 tbsp coriander seedsw
2 tsp cumin seeds
1 tbsp Pomegranate seeds
2 bay leaves
1 tsp black pepper
1 tbsp fennel seeds
1 tsp ginger powder
1 tsp garlic powder
2" x 2 cinnamon sticks
1 small piece mace
1-4 piece piece nutmeg
2 star anise
5 green cardamom
7-8 cloves
3 black cardamom
1 tbsp paprika powder
1 tbsp red chilli powder
1/2 tsp Citric acid
INGREDIENT-6
Bay leaves - 8
Cinnamon - 6-6 3"
Nutmeg - 1/2 piece
Star Anise - 2
Green Cardamom - 20
Black pepper - 40
Cloves - 25
Dry Ginger - Saunth 6" piece
Fennel Seeds - 1.5 Tbsp
Coriander Seed - 3 Tsp
Black Cumin - 1 Tsp
Cumin Seeds - 2 Tsp

Combine and grind all ingredients to make a powder.

Now in a separate bowl add:
Red Chili Powder - 2 Tsp
Turmeric Powder - 1.5 Tsp
Coriander Powder - 1 Tsp
Grinded Masala - 2 Tbsp

Mix well...
