    Beef Shami Kabab

    Aik kilo gosht beef
    Daal chana half kg pani main bhigo dain
    Garam masala powder 1 tea sp. Ya khara garam masala as per taste.

    Ginger 1 inch
    Garlic 1 whole

    Method
    Beef ko dho kar is main tamaam masaale daal kar galne ke liye rakh dain for half an hour in cooker. Then is main bheegi hui daal daal kar agar zaroorat ho toh thora mazeed pani add kar ke mazeed half hour galne ke liye cooker main rakh dain. Phir flame off kar dain.     Chicken Shami Kabab

    Ingredients Of Chicken Shami Kebab
    1 Cup Chana Dal
    2 tsp Oil
    1 tsp Cumin Seeds
    7-8 nos Cloves
    7-8 nos Black Peppercorns
    2 sticks Cinnamon
    2 tsp Coriander Seeds
    1 tsp Ajwain
    3 nos Red Chilli Whole
    1/2 tsp Chilli Flakes
    500 gram Boneless Chicken
    1 tsp Salt
    1 cup Water
    1 tsp Ginger, finely chopped
    2 nos Green Chilli
    2 tsp Garlic, finely chopped
    1/2 cup Coriander Leaves , chopped
    1/2 cup Mint Leaves , chopped
    2 nos Egg

    How to Make Chicken Shami Kebab
    1.Soak 1 cup of chana dal for at least 30 minutes.
    2.In a pressure cooker heat oil and add cumin seeds, cloves, black peppercorns, cinnamon, coriander seeds, ajwain, red chilli and chilli flakes. Saute for 1-2 minutes.
    3.Now add the soaked chana dal and mix thoroughly.
    4.Add the boneless chicken and salt. Bring to simmer, adding required quantity of water.Chicken Shami Kebab
    5.Cook until all the water has evaporated and chicken is tendered.Chicken Shami Kebab
    6.Let it cool for some time and then grind all the ingredients to a thick paste.Chicken Shami Kebab
    7.In the paste add ginger, green chilli, garlic, coriander leaves and mint leaves. Mix all the ingredients to combine well.Chicken Shami Kebab
    8.Now add the raw eggs liquid and mix thoroughly.Chicken Shami Kebab
    9.Using your palm make the kebabs of any desired shape and size, generally flat round shape.Chicken Shami Kebab
    10.Now dipping in egg fluid shallow fry the kebabs from both sides till golden brown.Chicken Shami Kebab

    Mutton Shami Kabab

    Ingredients Of Mutton Shami Kebab
    500 Gram Mutton Keema
    1/2 Cup Chana Dal
    2 Tbsp Ghee
    1 Cinnamon Stick
    1 Mace
    3 Cloves
    1 Bay Leaf
    2 Green Cardamoms
    7 Black Peppercorns
    1 Brown Cardamom
    1/2 tsp Salt
    1/2 tsp Red Chilli Powder
    1 Cup Water
    1 Onion
    1 Green Chilli
    1/2 Lemon

    How to Make Mutton Shami Kebab
    1.In a bowl soak ½ cup of chana dal for 30 minutes.Mutton Shami Kebab
    2.Heat 2 tbsp ghee in a pressure cooker. Add cinnamon stick, mace, cloves, bay leaf, green cardamoms, black peppercorns and brown cardamom. Mix them thoroughly.Mutton Shami Kebab
    3.When they crackle add mutton Keema to it.Mutton Shami Kebab
    4.Now add salt and red chilli powder.Mutton Shami Kebab
    5.Mix it thoroughly and cook for a minute.
    6.Add soaked chana dal and mix it well by adding a cup of water.Mutton Shami Kebab
    7.Pressure cook the mixture until the mutton gets soft.Mutton Shami Kebab
    8.After 1-2 whistles remove the cover and mix it well.
    9.If water remains, cook till the mutton dries up.Mutton Shami Kebab
    10.Grind and then refrigerate for 30 minutes to get a thick paste.Mutton Shami Kebab
    11.Mix onion, green chilli and lime juice to this paste and mix thoroughly.Mutton Shami Kebab
    12.Make flat balls out of this dough and refrigerate for another 10 minutes.Mutton Shami Kebab
    13.Heat a tbsp of ghee in another pan and shallow fry the kebabs from all sides until golden brown.Mutton Shami Kebab
    14.Place them on an absorbent paper and serve hot.
